Why our sourdough is ‘real bread’
At the heart of our bakery is Bridget Bar-dough—our much-loved sourdough starter, she has a very bubbly personality, and was originally derived from a 45-year-old culture during our time living in France. We make sure we look after Bridget, she is fed daily and has her own temperature-controlled little house. This level of continuity and care results in bread rich in flavour and full of healthy, natural cultures.
Each loaf is one of a small batch, using only quality ingredients. We enjoy using traditional sourdough techniques with slow, over night natural fermentation. There are no additives or emulsifiers around here. Each loaf will only be made with ingredients you can pronounce!
